I don't always do it the same way...

It depends on how crazy (and how spicy) I want to get with it. I know with [livejournal.com profile] unclejimbo, spicy is out... but there's no saying I can't make two different types, right? =D

[livejournal.com profile] chronovius (loves) the Mac'n'Cheez I've modded a bit from the recipe book software some friends gave me for Christmas last year. It's simple, with extra cheese and the addition of grated parm.

  • 1 1/2 cups macaroni (2 cups)
  • 1 teaspoon vegetable oil (ignored)
  • 4 tablespoons butter (I use unsalted)
  • 3 tablespoons flour
  • 2 cups milk
  • 8 ounces american cheese sharp processed, cubed (a cup of whatever's in the fridge)
  • Salt and freshly ground pepper to taste
  • 1/4 cup crackers crumbs, saltine (replaced with as much grated parm as it takes to cover the dish)

  1. Heat oven to 400° F.
  2. Cook macaroni in lightly-salted boiling water until nearly tender.
  3. Drain, mix with vegetable oil, and set aside.
  4. In a medium saucepan melt 3 tablespoons butter; add flour and stir 3 minutes (until well incorporated).
  5. Add milk and cook mixture over medium heat until smooth and thick.
  6. Remove from heat; add cheese and blend until all cheese has melted, (then remove from heat).
  7. Season with salt and pepper.
  8. Pour sauce over macaroni and mix until just barely coated.
  9. Pour mixture into greased 1 1/2 -quart casserole.
  10. Sprinkle with cracker crumbs (grated parm) and dot with remaining 1 tablespoon butter.
  11. Bake for 30 minutes or until top is golden and macaroni is piping hot.

Oh, and generally I use rotini instead of macaroni.

I used to make cheese fondue by pouring it all onto one slice of french bread and eating it open face. I lazy.

Which reminds me, I haven't done mix'n'match mac'n'bacon'n'cauli cheese for AGES. One of my favourite things, all my own invention. Cheese sauce, pasta, cauliflower and bacon = mac & cheese with a bit of cauliflower to try for N, mac & bacon cheese for M (won't eat cauliflower) and the whole lot for me. Since I last did it though, N has discovered bacon.

One of my friends has the quintessential Mac and Cheese cookbook. I know it's available at Vromans, and some of the recipes are quite gourmet.
