Well stocked cupboards are a blessing. We're having a couple weeks of stretching every penny, I find myself taking a mental tally of everything I take out of the freezer. It's not a good feeling. But we'll make it.

Going to file the taxes online today. Yes, I am.

Nutmeg muffins sound very yummy.

Augh - almost forgot. Hang on.

It comes out of this book.

2 c all-purpose flour
3 tbls granulated sugar
1 tbls baking powder
1/2 tsp freshly grated or 1 tsp ground nutmeg
1/2 tsp salt
2 large eggs
1 c milk
1/4 c butter, melted

Heat oven to 375 F. Grease muffin cups, or use foil or paper baking cups.

Throughly mix flour, sugar, baking powder, nutmeg, and salt in a large bowl.

Break eggs into another bowl. Whisk in milk and butter until well blended. Pour over dry ingredients and fold in with a rubber spatula, just until dry ingredients are moistened.

Scoop batter into muffin ups. Bake 15 to 20 minutes, or until lightly browned and springy to the touch in the center. Turn out onto a rack.
