Still, curious to know what, exactly, would happen if I swapped sugar for these great pretenders, I decided to run some trials.

You don't wanna do that.
Do yourself a favor. Go back to the manufacturer and work from their recipes, if you want to use anything but sugar. Better living through chemistry, all that and whew!
