Some quotes from the MFU behind the scenes book I found amusing/interesting - part 1
Rolfe’s prospectus had established “U.N.C.L.E.” as the name of the international crime fighting organisation Solo worked for, although at this point no one had yet assigned words to the letters.

At one point he [Norman Felton] changed Solo’s first name to Edgar, and had him work for a CIA-type organization where he answered only to the president of the United States;

[Sam Rolfe] created an organization he named “U.N.C.L.E.,” developing it in minute detail, making sure it was an international organization so the series would not be seen as an allegory for the Cold War. He stated at the time that he thought audiences did not want to tune in just to see the same things that scared them on the news earlier in the day. But Rolfe confesses that one reason he chose “U.N.C.L.E.” was because it was provocative–it could be mistaken for the United Nations, or Uncle Sam.

To establish an international flavor, Rolfe also suggested in his second prospectus that a Nigerian agent and a Japanese agent be developed for the series, and he gave Solo a partner, whom he designated a Russian and gave the name of Illya Nickevetch Kuryakin. Illya was to be of equal rank with Solo, and an aid to him in times of trouble. But unlike Solo, Illya was to be a loner, quiet in manner and totally dedicated to the job. The fact that Illya was to be Russian undoubtedly helped Rolfe’s concept of U.N.C.L.E. as an international organization that had no Cold War philosophical differences to contend with. Illya was seen as living in a small apartment, where he kept his clothes but nothing else tidy and where he secreted a collection of jazz records under his bed.
